Hi everybody and welcome back to Mindset Coach Academy podcast. My name is Lindsey Wilson and today we are doing three of my favorite things.
I did an episode last fall about, I don't know what I could call it, like five things I'm into or something and people really liked it. I think I always think that like, I don't know, do you really care about my life? But then the episodes that I really enjoy about other people are like a sneak peak of what's going on in their life. And so I thought that I would talk about a couple things right now. I actually have, some are like a little bit of, I don't know, things I'm into or things that have kind of shifted for me. So I don't really know what we'll end up calling this episode, but it's like these three things I want to talk about. So the first one is I started growing sprouts.
Okay, you guys. Originally I did it because I've grown things. Okay, like it's not like I've never grown anything, but this is in my kitchen and it's the middle winter. And I love creating things. I love feeling like I don't have to go to the store. I love homemade things. I love growing things. I've had gardens outside like all the things, right? And so I'm not really sure why sprouts have been like so fun. But maybe it has something to do with the fact that one, they taste delicious and two that it's done inside and I can share it with my girls.
And you know, it is in the middle winter. So it's pretty fun to like have something fresh. And I eat a lot of vegetables. I mean, if you follow my Instagram, excuse me, I have, I eat like a huge salad every lunch usually. And so having vegetables that I can just really grab and that I can make my own and have them always ready has been really fun. So I got these really cool. I got them from Gardenery, which is a really cool company out of Nashville.
They have amazing Instagram. And it's this woman that teaches how to garden. And she has sprout kits and they're like, I don't know, they're probably eight inches across.
And you can get them on Amazon too, I've seen them, but and they're stainless steel and they have like this metal mesh bottom. And I have two stories of them. And then I have a third on the bottom that catches all the water. And so it's been really fun with my girls, you know, you soak the seeds ahead of time, and then you lay them out and then you just water them every, every twice a day. And so my girls were really into it, because like, you know, two days in, you can see the sprouts growing out of the bottom.
And then, you know, four days later, you're putting them in the sun to get them a little green, and then you harvest them and you get a ton. And so that's been super fun. And like my daughter has been making her school lunch, she's eight years old, she's been doing it herself. And she's been making them with sprout. She actually discovered it at my neighbor's house, my friend's house, who she uses sprout, she makes sprouts too, or grow sprouts. And so she's gotten really into a sandwich with sprouts on it, which is just like so cute and fun. And she really likes it. And she likes making it.
And she does it herself. And like, it's just been really cool. I mean, there's really nothing like growing your own food, like in like the smallest way that just makes you feel, I don't know, to me, I think it actually makes me feel safe. Because I'm like, okay, I don't have to go to the store, I don't have to rely on anybody else. Like I can actually create something with a little bit of attention and a little bit of time, and some water and some seed, like, I can create something really from nothing, from seeds, and nourish myself and nourish my body. And so that's been fun. Like it really, and again, it's like a water in the morning and at night. And so it's not a lot of time, it takes a little space on my, my counter, but I put it right into the compost.
So it's not a big deal. And again, I find ways to eat it. And I'm like putting them on everything. And so it's just something that's been really fun, really cool for me to do, especially in the winter. And so sprouts, sprouts, you guys. That's my first thing. Okay, my second thing is, it's gonna sound pretty silly, I think, because it's something that I've been trying to do.
But until I made it like ultra simple, it didn't work. And it's this, it's meal planning. Okay, I have four kids, lots of things going on, some activities, we haven't gotten crazy, crazy on the activities, I know kids have people have kids a little bit older or like every night with activities. But I started thinking about that's, that's like right around the corner for us. And I started thinking like, how the hell am I going to feed and have dinner and everything and go to activities and all the things.
Because even the nights, we do have stuff, it's like gotten to be a little bit of a challenge, you know. And I've tried, I've like, how did I, okay, I need a meal plan. And I've gotten like, you know, I don't know, someone on Instagram or Facebook will have like, get my five day meal plan with grocery lists, you can pre make things, and you can freeze them, and then it'll be dinners ready, put in the crock pot in the morning. And, and grocery lists, more grocery lists.
And I just couldn't do it. Like I would try it, I would have the list, I would do a couple pre meals, you know, pre cooked meals. And it's not that the cooking was difficult, like, the cooking was simple, like really simple stuff. But I didn't really love any of it.
And it wasn't ours, you know, it wasn't like my family. And what I started realizing was like, I go to the growth, we know, we have like our big Costco trips, we pretty much get the same things that they're just like standard to have in our extra fridge. And then every week, I usually go to Trader Joe's or Whole Foods or maybe QFC. And like, I kind of get the same things. My point is, is that I've been doing this for a while. I'm cooking for sure.
And with kids for a while. Also, I cook the same things over and over again. I have the meal plan in my head. I have the grocery list in my head.
I already have it done. And here's where the simple act, this is where you're gonna be like, Lindsey did it, we need to listen to a podcast to learn this, the simple act of Sunday afternoon, when I'm kind of doing a couple things anyway, I usually like make granola, I usually make spaghetti, and I usually hard boiled eggs, or something like that on Sundays or make some bread. When I'm doing that, I write down, this is the genius. This is my Lindsey meal planning genius. I write down Sunday through Saturday, I write down the meal, and I write down the vegetable.
That's it. And it's funny, because again, it was all in my head anyway, I would kind of be doing the calculation of like, okay, we're gonna probably have pizza this week. So I'll get some that and that. And then maybe we'll do some tacos.
And I'll probably roast a chicken. So get so now I have it written down, I go to the grocery store usually on Tuesday anyway, because it's right next to my therapy. So whatever I don't have, I'm usually making my meal for Friday, for Monday on Sunday. And then whatever I don't have on Tuesday, when I'm making that list, I'm also thinking about what's in the freezer, and what we already have. And what's in the pantry, because again, we've gone to Costco, so we already have stuff. So I write it down and then whatever I don't get, I get at the grocery store. And I don't get a whole lot of other stuff.
And here's the thing. A lot of times, we have too many meals planned, because we generally have some leftovers. So usually I get one or two nights and like, okay, we don't actually need to cook this. But I have the list up on the night, tape it on the refrigerator.
And you know, I work from home. So a lot of times, I'll go upstairs and I'll be like, what do we have for tonight? Okay, so I'm going to start rice real quick, because we're doing rice bowls tonight. And again, these are things that like, I would generally be cooking them anyway.
But I would be thinking about it, I would have a decision to make at like two or three o'clock of like, okay, what do I need to get ready? This time, it's already written on the refrigerator. And so I'm already defrosting the chicken for Thursday. I don't have to think about it anymore. I know that we need to pick up celery and carrots, because that's our vegetable on Wednesday done.
What are we using in the freezer that we've forgotten about? Oh, that's Friday night. Okay, that's moved here.
I got that ready. And again, it sounds so simple, because really, what I realized was I was already doing it. I just didn't have it written down. That's that's a life lesson here, that you probably didn't need to listen to a podcast to learn. But the here's the thing.
Sometimes we need to hear things in a little bit more than one millionth time. And all of a sudden we're like, Oh, I bet if you have a family, or even if you don't, you cook the same things overnight, what are your five most favorite meals that you could do in your sleep, that when you go to the grocery store, you're picking up those things anyway? write them down for this week, Monday, Tuesday, Wednesday, Thursday, Friday. You'll probably need to skip one for leftovers. And literally write, I write it down with a Sharpie with the vegetable and I put it on the refrigerator and it has been life changing. I don't need to screw around with pre-making 19 meals and finding freezer space for them. I don't need a grocery list from somebody that doesn't know what my family likes and doesn't know what we like to eat. We pretty much eat healthy anyway.
And when we don't, that's kind of baked into it too. There's gonna be a frozen chicken, fried chicken night. And so that has been, I can't even tell you, the brain space that it has taken just, that it has freed up. And it sounds so simple and so, again, like captain obvious, but I've been trying to figure out the meal, goddamn meal plan thing for a while. And I think I was always trying to get somebody else's genius ideas and like stick them into my life and like cram them into my family and my house when I realized that I already have the plan, I just didn't write it down. And maybe there's some life lessons in this for like non-meal planning. Like maybe we already know the thing we need to be doing and we need to stop trying to get somebody else's expertise and we just need to write down what we already know.
Maybe that's it. I think oftentimes the starting, the simplest way to get what we want is often the best because we get so easily get overwhelmed, you know, and it's just so nice to get some momentum. And now I'm like in the habit of like, okay, Sundays, again, I'm attaching, you know, we're like habit stacking, I'm attaching it already to things that I already do. I already come up with our schedule on Sunday for our au pair. I usually am already, again, making granola or hard boiling eggs or doing some sort of like light food prep on Sunday. So now we just write down our meal plan for the week and it has been life changing. Okay, so that's number two of my, I don't know what, my things, my things that I'm into right now, meal planning, I'm into meal planning. I used to kind of like roll my eyes because I tried it so many times and I was like, Jesus Christ, another person talking about how I need to meal plan, like shut up, I've tried it, you know?
And now I'm like meal planning for real, meal planning. Okay, and I also think, one more thing on this, I also think that in our like, I don't know, capitalist society, there's like the reason that people, and not to blame any of these people that are trying to like burn a business, but it's like, maybe we don't actually need to buy something. Maybe we don't actually need the special containers or the fabulous meal plan or the expert. Maybe we just need to find a little time and a piece of paper and do it ourselves and like keep things simple.
Okay, that's my rant. The third thing that I wanna talk about is playing basketball. You guys, I started playing, I had started playing maybe a couple months ago and then I got hurt and then I stopped again for a while. And, you know, basically what happened was, I played basketball really seriously for many, many years and then I started having babies and then I would try to go back and I would for a little while and then I have another one and then COVID hit and then I had a back injury and like I just stopped playing for a long time. I went back and played, got hurt, took another break and then I started back like, I don't know, maybe a month and a half ago.
You guys, if you have stopped doing something that made you feel like yourself, that brought you joy, that brought you community, that got you to move your body, that got you to shift your mind, that you found flow or joy or just pure childlike fun, go do that thing again. I am having so much fun playing and am I slower? Yeah, am I not shooting as well?
Yeah. And I think for some people, it's really hard to go back to something you were like the best at and maybe not be the best. And there is that sort of subconscious or maybe conscious feeling that, like you don't wanna feel not at the top of your game, so to speak. And I get that, I totally get that.
But what I will also say is the reward of getting back to something that has truly brought you joy in your life is it's like coming home. Like I'm coming down the floor on fast breaks and getting a pick and roll and hitting the post player for a giving or for a pick and roll and getting a high five. And I'm like this. And then my little girl has come and watched me. We're going to a basketball tournament this weekend, which I'm super excited about. And they're gonna be on the sideline or maybe even on the bench, like watching their mommy play. Like give me a break.
This is like amazing. And again, I'm bringing that up because it's so easy to stop doing things. It's so easy to deprioritize ourselves. And like I did it with every kid and I always tried to get back to myself, but the busier our life gets, the easier it is to lose ourselves and not take that time to get back to ourselves. And so maybe that's the message is what has brought you joy in the past? What have you gotten away from because you feel like you're too busy or other people need you or there's other priorities?
Like for me, getting back to playing hoops, again, that's like pure joy. It's home. It's where I feel, it's not the only place I feel like myself, but it's one of the places I feel like myself. You know, like I get to be competitive and positive and pissed and happy and, you know, use my body and all of the things that I just absolutely fell in love with the sport with in the first place. I get to feel those again. And again, all the Anseler things, the community, the teammates, my girls there watching me, like all of it is so fun and I'm so like, my heart is like so full of gratitude.
Like this sport has like given me so much and it continues to. And now I get to be the example of the 42 year old mom that is like prioritizing herself. Like give me a break. Like, and I'm like looking at myself, like we don't do that.
We don't prioritize ourselves. And now I'm doing it and I'm like, F yes, yes. Do something for you. Do something that brings you joy, that makes you feel like yourself, that makes you feel alive. Because what else, what else is there?
Like, and what better gift, if it has to be about other people, what better gift can an example, can we set for other people to watch us continue to find ourselves, continue to prioritize ourselves? Like it is like check, win, win, win, win, win, win, win, all the way around. And so that's what I'm doing. I'm playing hoops again you guys and it is so gosh darn fun. Like I love it. I've loved the sport my entire life.
I love it, love it, love it. So again, I'm growing sprouts. That's what I'm doing. I'm meal planning. That's what I'm doing and I'm playing hoops. That's what I'm doing. What are you doing? Let me know.
